I hope you have all had some nice time with your families over the weekend! For this weeks ethnic night I decided I would try to do an Easter themed Italian ethnic night. There are many Christians in Italy so it was very easy to find lots of interesting dishes that are Easter traditions.
Torta alla Pasqualina — fresh greens and egg pie in house-made puff pastry (fresh greens and eggs are both highly symbolic of spring)
Carciofi e Patate Soffritti — Artichoke and potato sauté
Minestra di Pasqua — soup of beef chicken, salami , fresh herbs and kale
For dessert :
Ciambellone — a lemon scented cake very traditional
