This week at Max and Irma’s we are doing Vietnamese cuisine. Vietnamese food is all about rice in many forms (steamed, sticky, noodles, pancakes, porridge), fish sauce (lots of it), herbs (mint, cilantro, lemongrass), seafood, pork, beef, chicken, and tropical fruits (banana, papaya, mango, etc.), with borrowed flavors from the French imperialists and nearby countries like Laos, Cambodia, Thailand, and China. Definitely one of my all-time favourite countries, the food is light, not heavy at all, and super highly flavoured! Each dish has its own balance of hot, sour, salty and sweet.

 

Bun Thit Nuong   —   this is the star of the show this week, grilled caramelized pork, rice vermicelli noodles, cucumbers, scallions, fresh herbs, do chua (daikon and carrot salad), roasted peanuts, and of course, Nuoc cham  (characteristic Vietnamese dipping sauce-hot, sour, salty and sweet)

 

Cha gio   —   crispy spring rolls with pork, mushroom, bean thread noodles and jicama

 

Goi Du Du Chay   —   Papaya salad
